Dooley’s Peach Fool
For a little spring on your table.
- 40 ml Dooley’s Original Toffee Cream Liqueur
- 400 g peach slices in juice
- 4 tbsp. natural yoghurts
- 4 tbsp. crème fraiche
- 1 tbsp. icing sugar
- 2-3 fresh mint leaves
- 1 handful of amaretto biscuits
- 1 fresh ripe peach
- Dessert glasses: 2
Mix the peaches with Dooley’s until you receive a purée mixture. In a separate bowl whisk yoghurt, crème fraiche and icing sugar together. Chop the mint leaves as finely as possible and add to the yoghurt mix. Crush some amaretto biscuits into the bottom of each dessert glass. Add in each glass about 2 spoons of the peach puree and cover with a layer of the sweetened mint yoghurt. Repeat the layers with biscuit, peach and yoghurt and finish with crushed biscuits. Cut the peach in half and remove the stone and slice the peach. Garnish the peach slices on top of the dessert glasses. Serve.
